1 lbs prepared chorizo
1 white onion
2 granny smith apples
8 diced dried apricots

Goat cheese
Directions
Remove the sausage from its casing and brown it up.
While this is browning dice your onions and add to the browned chorizo.
Dice apples and apricots and add to the chorizo and onion mixture.
To build the tacos, toast the tortilla shells in the oven or over an open flame.
Add the chorizo mixture to the shells.
Top with a generous amount of chimichurri
Top with crushed pistachios and goat cheese
