Fresh Cherry Chocolate Chip Cookies

INGREDIENTS

3/4 cup (1 1/2 sticks) butter, softened

2/3 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon Cooks almond extract

1/2 teaspoon salt

1/2 teaspoon baking soda

1 2/3 cups all-purpose flour

2 cups semisweet or bittersweet chocolate chips

2/3 cup fresh cherries, chopped

Directions

Preheat the oven to 350 degrees Fahrenheit.

Using a hand mixer or standing mixer, cream the butter and sugar. Add the egg and stir to combine. Mix in the dry ingredients (baking soda through flour) and stir until incorporated. Don’t over mix.

Add the chocolate chips and stir to combine. Last but not least, add the cherries and carefully incorporate into the batter.

Spray a baking sheet with cooking spray or line with a Silpat. Using an ice cream scoop, place batter onto the sheet and bake for 16-18 minutes. When beginning to turn golden on the edges, remove the cookies from the oven. Cool on a wire rack.

Keep cookies in a reusable container or resealable plastic bag.

The cherries give these chocolate chip cookies a unique color and amazing flavor.
