Ingredients:
1 LB lean pork tenderloin
1 Tablespoon Buona Cucina Extra Virgin Olive Oil
3 Tablespoons Buona Cucina Hungarian Sweet Paprika
1/4 teaspoon Cayenne Pepper
1 1/4 cup water
1 can tomato sauce (15 oz can size)
1 red and 1 yellow bell pepper, seeded, roasted, and cut into 1″ pieces
Cracked Black Pepper to taste
2 Cups cooked medium grain brown rice
Directions:
Cut pork into 1″ pieces.
Bring olive oil to medium high heat in a dutch oven or deep skillet
Add pork and cook until browned on all sides – about 5 minutes.
Add the paprika, cayenne pepper, tomato sauce and 1 1/4 cup water.
Bring to a boil, reduce heat, cover and simmer gently for 30 minutes.
Add the bell peppers and cook an additional 10-15 minutes until the meat is tender and peppers are soft.
Serve over rice with cracked black pepper
