Ingredients:
3 Tablespoons Buona Cucina Peri Peri Seasoning
3 Tablespoons Buona Cucina Lemon Fused Oil or garlic ect..
Zest and juice from one lemon, divided
Zest and juice from one lime, divided
8 ounces halloumi cheese, cut in four slices
2 carrots, peeled and shredded
1 cup (1 pound) shredded cabbage
1 red onion, sliced thin
1 cup cilantro, chopped
4 Tablespoons mayonnaise
Arugula, or your favorite greens
Tomato, sliced
4 pretzel rolls
Directions:
In a small bowl, combine the Peri Peri Seasoning and the olive oil. Zest lemon and lime and add to the marinade. Mix well. Place the halloumi slices in the marinade. Let it sit for about half an hour before cooking.
Juice the lemon and lime. Discard the flesh of the fruits.
In a large bowl, toss the carrot, cabbage, red onion, and cilantro. Mix in the mayonnaise, then add the freshly squeezed lemon and lime juice.
Heat your grill to medium, oil the grates of the grill with a bit of olive oil and place halloumi on the grill. Brown both sides.
Assemble sandwiches. Place arugula and tomato on a pretzel bun. Next, place halloumi and top off with the slaw.
